Ingredients:
2 c. Flour
1 1/2 tsp. Baking powder
1/2 tsp. Baking soda
1/2 tsp. Salt
1 Tbsp. Orange zest, grated
1 1/2 c. Fresh cranberries
1/2 c. Chopped nuts (I prefer pecans)
1/4 c. Butter, softened
1 c. Sugar
1 Egg
3/4 c. Orange juice, fresh
Directions:
1. Preheat oven to 350. Grease and flour a 9x5" loaf pan or three mini-loaf pans.
2. Combine flour, baking powder, baking soda, and salt. Stir in orange zest, cranberries and nuts. In separate bowl, combine butter, sugar and egg. Stir in orange juice. Add flour mixture until just moistened. Pour into prepared pan(s). Bake for 1 hour or until bread springs back when touched.Combine powdered sugar and orange juice in small bowl. Using a spoon, drizzle glaze over the top of the hot bread. Allow bread to cool in pan(s).
