Tomato Feta Salad


I thought I would add a "healthy" recipe to start the new year off right. I got this recipe from the Food Network, and I love it. I have used it several times when I have needed to add a nice touch to a catered dinner party... but the best part is, it's perfect for any occasion.

Ingredients:

4 pints Grape tomatoes
1 1/2 c. small-diced Red onion (about 2 onions)
1/4 c. White wine vinegar
6 tbsp. Olive oil
1 tbsp. Kosher salt
1 tsp. freshly ground Black pepper
1/4 c. chopped fresh Basil leaves
1/4 c. chopped fresh Parsley leaves
1 1/2 pounds Feta cheese

Directions:

Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta in 1/2 to 3/4-inch cubes, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.
